I actually have had June's menu done for a few weeks but did not get it posted! Hopefully it is not a hot June because it is not a very good summer menu but I am trying to make stuff father in law will like. It's a little more carb heavy than I would like but I will add lots of salads/veggies. I am just posting the main dish.....veggie side dishes will be decided each week as to what needs used, is in garden or on sale/looks good at store.
I have pretty much everything for main dishes listed here....in fact the beef sauces for lasagna, taco casserole and tamale pie are all prepped from marked down meat and in freezer. Cooked meatballs and hamburger patties made. Teriyaki crockpot chicken, crock pot beer marinated chicken and fajita chicken for enchilada casserole are cooked leftovers from last month.
June 1 was turkey roast that I did not get made last month with leftover green beans, steamed carrots and twice baked potato from freezer, can cranberry sauce.
Tonight was leftover turkey, cranberrysauce, carrots, last of the twice baked potatoes and local fresh asparagus. Strawberry shortcake for dessert.
Saturday will be turkey sandwiches, loaded green salad and strawberry shortcake.
Sunday barbque meatball sandwiches, maybe the rest of the asparagus? And salad?
I will pick one of the following beef dishes each week and it will be enough for 2 dinners that week plus some lunches
*tamale pie ( new recipe)
*taco biscuit casserole (new recipe)
Then I will pick one of the following chicken/seafood recipes each week and it will be enough for 2 dinners that week plus some lunches.
*white chicken enchilada slow cooker casserole
*chicken noodle casserole (new recipe)
*clam chowder ( new recipe)
*jambalaya (new recipe)
Pizza 1x a week ( plus 1 lunch for hubby)
Sandwich or Burger 1x a week
So that is 6 meals per week! Yay! I will fill in the 7 th day with easy meals. Some things I already have are teriyaki chicken, frozen stir fry mix. Eggs, sweet chicken sausage,waffles, pancakes, meatballs,sauce
and spaghetti squash, crockpot beer chicken cut in strips for big ol main dish salads.....I am sure there are a handful of other things too.
I am feeling pretty organized this month!
Of course this is just for hubby and father in law. I plan to eat different veggie/vegetarian protein combos for dinner but am going to wing it as to what sounds good (and needs used) so I can stay on my plan!
