Winter baking day here today and I baked Louise Cake. It’s not really a cake, more correctly a ‘slice’. (Maybe you would call it a bar (?) I’m not sure…but over here we say ‘slice’.)
Louise cake is a good old favourite in NZ and when my MI friend and I toured around NZ last year she ate Louise cake in every café we stopped at!
Louise cake has a softish shortcake base which is traditionally spread with raspberry jam (I used my homemade Jumbleberry Jam)…then it is topped with a coconut meringue mixture… and then baked. When cooked it is moist and mouthwatering! It will keep well… but it never gets a chance in our house!:kokkie:
