Didn't stick exactly to plan last week though did make the 2 new recipes Greek chicken and cheeseburger tator tot casserole.
Sat was bacon wrapped chicken breast with jalapeño popper filling ( bought from meat counter to grill) deli potato salad and leftover green beans, I had a hummus plate.
Monday was low carb taco bowls
Tuesday- spinach artichoke egg casserole/leftover green beans
Not for sure what days yet but rest of the week will be

Potaoto soup x2.....with whatever I dig up,, salad, cheese & crackers, raw veggies ???
Thursday's are hubby's golf nights in nicer weather and they usually get a burger after so was always my night off but now I have father in law here.......think I will just give him a choice out of his easy stuff he likes......can of soup, half a toasted sandwich, tuna with crackers etc.
I really liked not cooking dinners this weekend. Think I may start getting something to barbque on saturdays with easy veggie sides I can make early in the day?? Sundays leftovers or frozen burritos
Then hubby can fix for them? Hmm........
Edited to add.....I am already changing things.....making a spinach artichoke egg casserole for dinner tonight to use up some spinach and the leftover southern green beans can be served with it. Only making half a recipe. Good thing about it is I can prep it now and put in fridge to bake tonight.
